Turkey escalopes
I spent the first day of the New Year with a blissful rest. I watched a few movies, made dinner and that was it. Exceptionally, for this year, I did not make any New Year resolutions. Usually, when I make some, nothing comes out of them. Is it the same for you too?
For sure, this year I would like to concentrate more on my blog, not only on the photos which I need to improve, but also on making videos. When running a culinary blog, it is much more difficult to resist the temptation to eat sweet or give up snacking away. Although, I do not eat lactose at all and try to avoid gluten, there are days when I am tempted by a piece of cake or breaded pork chops.
Therefore, I start the New Year with a fairly light and healthy dish, turkey escalopes for which I leave you the recipe below. I served the dish with a delicious fruit sauce made with apricots and orange juice.

Ingredients for turkey escalopes.
- 450 g turkey breast
- 1 tablespoon of flour
- 1/8 teaspoon of black pepper
- 3/4 teaspoon of salt
- 2 tablespoons of sunflower oil
Apricot sauce:
- 100 g dry apricot
- 1 small red onion
- 1 tablespoon of grated ginger
- 2 tablespoons of light brown sugar
- 1/2 teaspoon of orange zest
- 100 ml orange juice
- 1 clove
- 100 ml water
How to make turkey escalopes.
Slice the turkey breast and gently tenderise the meat with a mallet. Season with salt, sprinkle with pepper and coat in flour.
Heat the oil in a frying pan and once hot, place the meat in. Fry the escalopes on a medium heat on both sides until golden brown.
Apricot sauce: pour water over the apricots and leave them to soak for two hours. After that, cut them into slices and place them in a cooking pot. Add finely chopped onion, grated ginger, brown sugar, grated orange peel, clove, water and orange juice. Simmer for 20 minutes, then put aside half of the cooked fruit along with some juice and blend it. Put the blended part back into the pot and mix it.
Serve the escalopes with the fruit sauce.

You can prepare chicken the same way.
The apricot must be soaked beforehand, otherwise it will cook for quite a long time.
It’s best to use freshly squeezed orange juice. The sauce will taste much better than if you used ready-made juice from a bottle or cardboard.
