Casseroles with potatoes are a nice idea when you want to make a quick and cheap dinner.
Such a dinner can last for a few days, and it doesn’t stop tasting delicious.
The basis of any potato casserole is, of course, potato. What else you want to combine it with depends on you.
You can add vegetables such as broccoli, cauliflower, zucchini or tomato. Or if you fancy a meat casserole, you can use chicken, pork, turkey or beef. In the casserole I made recently I opted for meat and decided to use sausage, as for me it works best in casseroles. Sausage with paprika would be the best choice if you can get any. You can use chorizo or other sausages that resemble home-made sausages and contain paprika. During baking, the sausage releases its fat and all the flavours it contains. This flavour enhances the taste of potatoes.
Ingredients for potato casserole.
- 4 hard-boiled eggs
- 2 spring onions
- 300 ml milk
- 200 ml cream (30% or 36%)
- 150 g sausage with paprika
- 600 g potatoes
- 1,5 teaspoon of salt
- 1/6 teaspoon of black pepper
How to make potato casserole with sausage.
Peel the potatoes and cut them into very thin slices. I used a slicer to do this.
Cut the sausage into slices. Cut the hard-boiled eggs into rings and finely chop the spring onion.
Pour milk and cream into a large bowl, add salt, pepper and stir it. Then add the sliced potatoes, eggs, sausage and onion to it. Mix with your fingers.
Transfer the mixture into an ovenproof dish. Cover the top of it with a lid or aluminium foil. Put in an oven preheated to 180 degrees Celsius for 40 minutes. After 40 minutes, carefully remove the lid or foil, increase the temperature to 200 degrees Celsius and bake for another 50 minutes.
Once baked, set the casserole aside for 10 minutes to cool it down slightly.
Good to know when making potato casserole.
The best sausage to use in this casserole is one which contains paprika. If you are not able to buy any, you can add regular sausage as a last resort. I would fry it beforehand though.
The baking dish I used was heat-resistant and had dimensions of 23 by 23 centimetres.
