Kohlrabi salad
Kohlrabi is a cruciferous vegetable with a soft center, ideal to be eaten raw, in a salad or cooked as a vegetable stew or soup. You can already find several recipes for kohlrabi dishes on the blog, both cooked and raw.
This time, I want to encourage you to make a healthy kohlrabi salad with apple. You can make kohlrabi and apple salad very quickly, because both ingredients only need to be chopped, seasoned and it can be served immediately. I flavoured this salad with Greek yoghurt mixed with a bit of horseradish, which gave it a slightly more intense flavour. This kohlrabi salad can be served as an addition to chicken rolls, chicken thighs, roasted pork neck, roasted ham and many other meat dishes.

Ingredients for kohlrabi salad.
- 300 g apples (2 big ones)
- 250 g kohlrabi (1 big peeled)
- 1 big green onion
- 1 teaspoon of jarred horseradish
- 5 big tablespoons of Greek yoghurt
- 1/2 teaspoon of salt
- 1 teaspoon of lemon juice
How to make kohlrabi salad.
Dice or slice the peeled kohlrabi into very thin, medium-sized pieces. Do not peel the apples, remove the seed nests and cut the apple into quite large, thin pieces then drizzle them with lemon juice. Combine the kohlrabi, apple, finely chopped green onions and salt in a bowl. Mix yoghurt with horseradish in a cup, and pour it over the vegetables in the bowl. Mix it well. Keep the finished kohlrabi salad in the refrigerator.

Good to know when making kohlrabi salad.
When making this kohlrabi salad, it is worth using slightly juicy, crispy and sour apples such as Golden Delicious. No matter what apple you use, it’s important to drizzle it with lemon or lime juice, otherwise the apple will darken quickly.
To season the salad, I used spicy, jarred grated horseradish. You can also use freshly grated horseradish. If you choose fresh horseradish, grate it on a very fine grater.
