Herring with cranberries
The recipe for herring with cranberries, which I am sharing with you this time, will work both during the upcoming Christmas and also without any occasion. If you are a fan of herring, I suppose you already know this combination of herring and dried cranberries. I discovered it a few years ago, but somehow it is only now that I am adding a recipe for it on the blog.
The main element of this dish is, of course, the herring. Salted herring, or herring in brine or in oil will all work well here. Combine the herring with onions, cranberries, spices and oil, and leave it in the refrigerator for a few days. Herring prepared in such a way is good to eat after two days, but you can of course keep it in the refrigerator a little longer. Ingredients for herring with cranberries.
- 80 g dried cranberries
- 100 g onion
- 250 g herring in vinegar brine
- 150 ml sunflower oil
- 2 cloves
- 2 bay leaves
- 1/6 teaspoon od ground colourful pepper
How to make herring with cranberries.
Remove the herring from the brine, dry it and cut it into 3-4 centimetres wide pieces. Peel the onion, cut it into very thin feathers, put it on a strainer and pour boiling water over it. Drain and cool it down.
Place the cranberries in a bowl, pour boiling water over them and set them aside for 20 minutes. Next, drain off the water and put the cranberries in a larger bowl. Add the onion, herring, oil, bay leaves and cloves to it. Stir, then put everything into a large jar. Close the jar and put it in the fridge for at least 2 days. After that time, the herring is ready to be served.

Good to know when making herring with cranberries.
You can also use salted herring in this recipe. Before combining it with the other ingredients, first soak it for several hours in cold water, changing the water several times in the meantime.
