Herring in cream sauce with onion and apple
Traditional herring in cream sauce with onion and apple is a dish not to be missed from the Christmas Eve table. Herring in cream is an extremely simple dish to prepare. The herring should be soaked, cut, apple and onion pieces should be added to it and then it should be flavoured with sour cream and pepper.

Ingredients for herring in cream sauce.
- 250 g salted herring filets
- 120 g wine apple
- 120 g onion (white, sugar)
- 1/4 teaspoon of freshly ground black pepper
- 1 tablespoon of lemon juice
- 250 g sour cream (18%)
- a pinch of sugar
- freshly chopped dill for serving
How to make herring in cream sauce with onion and apple.
Place the herring fillets in a bowl, pour boiled but cold water over it and leave it for 30 minutes. Then change the water and set aside for 20 minutes. In total, change the water 2 to 3 times, depending on how salty the herring is. After taking the herring out of the water, dry it on a paper towel and cut it into pieces about 1.5 centimetres wide.
Peel the apple, cut it into medium-sized cubes and put it in a bowl. Add lemon juice and mix.
Cut the onion into small cubes, put it in a bowl and pour boiling water over it. Set aside for 30 seconds, then pour it into a colander and let it cool.
Combine the herring pieces with apple, onion, cream and a pinch of sugar in a bowl. Place it on a serving platter, sprinkle with freshly ground black pepper and finely chopped dill.

Good to know when making herring in cream sauce.
The best herring fillets to use are matias. Unfortunately, matias are very difficult to buy, and even if you manage to get some, they are quite expensive. Matias is the so-called “virgin herring”, that is herring before the first spawning. It has very delicate meat, is less salty and a bit more fatty.
Salted herring fillets are best used in this dish. However, if you do not have any, you can of course use herring in oil or herring in vinegar instead. I would recommend wiping the excess oil from the herring with a paper towel. In the case of herring in vinegar, I would soak it in water to slightly soften the taste of the herring.
The herring prepared in this way can also be served at family events and as a dinner dish. I quite often serve this herring with cooked whole potatoes for Friday dinner.
