How to make fried bananas in pancake batter.
Crack an egg into a bowl, add milk, salt, sugar, vanilla extract, baking powder and sifted flour. Using a hand whisk, combine all the ingredients into a smooth, uniform batter. Put the finished batter aside for 15 minutes.
Peel the bananas and cut them into 3 cm pieces.
Pour oil into a fairly wide pot – there should be enough of it for the bananas to float freely in it. Put the pot on the heat and warm it up. Put each banana on a small toothpick, dip it in the pancake batter and place it in the hot oil. Fry over a low heat until the batter is well fried on both sides. Put the fried bananas on a plate lined with paper towels. Before serving, sprinkle the bananas with icing sugar.

Good to know when making fried bananas in pancake batter.
I recommend using quite firm, unripe bananas. Their consistency works best once fried.
I usually pour the batter in which I soak the bananas into a narrow mug. This allows me to quickly and efficiently to dip each piece of banana in it.
