We all make them and we all like them.
They can be either thin or thick, sweet or savoury. You can serve them with fruits, cheese, chocolate and anything else you want.
Pancakes are very easy to prepare. This does not change the fact that not all of us can make them.
Sometimes the problem is too much flour, sometimes too little. They often stick to the frying pan and do not fry as nicely as you would like them to.
Other times it is the taste that turns out to be not as nice as what you wished for.
The conclusion is that to make a perfect pancake you not only need a good pancake mix but also a good frying pan.
It is best to purchase a pan designed specifically for pancakes.
When it comes to the pancake mix, sometimes you need to experiment with it. If there is not enough flour in it, bubbles of air will be visible on the pancakes during frying. If that happens, simply add more flour.
On the other hand, if you add too much flour, the pancakes will be hard. In such a case, more water or milk need to be added to the pancake mix.
The first pancake should be a test. If it turns out well, that is a great news, if not, then improve the pancake mix and try again.

Ingredients for pancakes.
- 200 g of flour
- 2 eggs
- 1 cup of milk (lactose free or regular)
- 1 cup of water or sparkling water
- 1 tablespoon of melted butter
- 2 teaspoons of sugar
- a pinch of salt
- oil, butter or lard for frying
How to prepare pancakes.
Whisk the eggs with salt and sugar in a bowl. Add flour, melted butter, milk and water. Do not add the water all at once though. Check on the texture of the mix whisking. If it is too dense, add more water.
Fry the pancakes on a warm, lightly greased frying pan on medium heat to golden brown colour.

The pancakes should not swim in fat. The frying pan should only be slightly greased with it.
