Egg omelette
An omelette is a dish made with fried eggs, and it usually has a round shape.
The simplest omelette is French omelette, which is based only on eggs, water and salt.
However, there are more elaborate versions of this simple dish. For example, Spanish tortilla contains fried potatoes and Italian frittata has vegetables and anchovies.
Below you can find a recipe for a simple omelette, to which I added sweet red pepper and parsley. This omelette is really fast to make, I promise you won’t spend hours in the kitchen. It is great served as a breakfast or a supper dish.

Ingredients for omelette.
- 2 tablespoons of butter
- 1 big red pepper
- a small bunch of parsley
- 4 eggs
- a pinch of salt
- a pinch of pepper
How to make omelette.
Melt a tablespoon of butter in a pan and add strips of bell peppers to it. Fry over a medium heat for three minutes. Transfer the fried peppers to a bowl.
Put the remaining butter to the pan and melt it. Crack the eggs into a separate bowl and beat them lightly with a fork. Add a pinch of salt and pepper to it, as well as finely chopped parsley. Pour the egg mixture over the melted butter. Reduce the heat to low and fry. When the eggs start swirling slightly, sprinkle them with fried peppers. Gently shake the pan until the eggs combine with peppers. Then cover with a lid and continue frying over a low heat for a few seconds.
Turn the omelette over as soon as you see that the eggs are half swirled. The egg mixture should not be hard when it is turned, they should still be slightly runny. Keep the omelette on a low heat for a few more seconds.
Serve warm, sprinkled with additional peppers and parsley.
Good to know when making egg omelette.

The pepper you are frying should not fall apart. Do not keep them on the heat for too long, they should be blanched and it’s nice if they are is still slightly crunchy.
It is best to turn the omelette over by placing a big plate on top of the pan, turn the pan over, and then slide the omelette from the plate onto the pan. I always do it, it takes only a few seconds.
If you don’t like peppers, replace them with other vegetables, like mushrooms or herbs.
Don’t add a lot of salt, literally a pinch will do.
