Delicious donuts filled with plum jam are my suggestion for donuts that are worth making on the occasion of Fat Thursday. How glad I am that this day of feasting on fried goods is almost here because I am eagerly awaiting the opportunity to eat a few donuts without feeling guilty. Of course, there is no need to go crazy and overdo it, but it is worth tempting yourself with at least one donut on this day. A proven recipe for traditional donuts with a filling will come in handy on this day. Donuts made according to this recipe come out fluffy, do not soak up fat and are exceptionally tasty. I make the donut dough from 3 egg yolks and one egg, a mixture of flour, sugar, butter, fresh yeast and milk. I add vanilla for flavour and also vodka, which prevents the dough from absorbing fat during frying.

I decorate these donuts most simply because I sprinkle them only with powdered sugar. However, there is nothing to stop you from decorating them with icing and decorating them with candied fruit peel or dried flower petals. I encourage you to try the following recipe for donuts and please enjoy.

Ingredients for donuts with plum jam.

Dough:

  • 250 g all-purpose flour
  • 250 g cake flour
  • 200 g lukewarm milk
  • 80 g soft butter
  • 3 egg yolks
  • 1 medium egg
  • 80 g crystal sugar
  • 30 g fresh yeast
  • a pinch of salt
  • 1 teaspoon of vanilla extract
  • 20 ml vodka

Additionally:

  • plum jam (a small jar 290 g)
  • oil for frying (1,5 l)
  • 1 tablespoon of oil to grease the bowl
  • powdered sugar for sprinkling
  • a bit of flour for dusting the dough

How to make donuts with plum jam.

Add crumbled yeast to a bowl of lukewarm milk, mix, then add a spoonful of crystal sugar and 2 spoonfuls of flour out of the whole amount. Mix and set it aside for 5 minutes. Put the egg, egg yolks, sugar, vanilla extract and salt in the bowl of a kitchen mixer. Beat for 5 minutes, then add the sifted all-purpose and cake flour and the risen yeast – mix for a minute. Following that, add the soft butter and knead the ingredients for a minute. Then, pour in the alcohol and continue kneading for 10 minutes. Transfer the dough to a large bowl greased with oil, then cover the bowl with a cloth and set aside to rise for 1.5 hours or until it doubles its volume.

Place the risen dough on the kitchen counter, deflate it slightly, and then divide it into 12 equal-sized balls — using a kitchen scale for this operation is best. Place the balls on a kitchen counter lightly sprinkled with flour, gently flatten with your hand, cover it with a kitchen cloth and leave to rise for 35 minutes. Pour a generous amount of oil into a wide pot, heat to 180 degrees Celsius, and place the donuts on it when hot. Fry the donuts at 180 degrees Celsius for 5 minutes, until they obtain a beautiful golden brown colour. Place the fried donuts on a plate lined with paper towels and leave to cool.

Place plum jam in a pastry bag with a donut tip and fill each donut with it. Sprinkle the donuts filled with jam with powdered sugar.

Good to know when making donuts with plum jam.

I flatten the dough into balls with my hand. After flattening, they have a diameter of 7 centimetres.
