If someone asked me what my favourite cake is, I wouldn’t be able to answer that question. It is impossible for me to choose only one from the huge list of cakes that I like to eat and bake. When it comes to eating cakes, I like cream cakes, jelly cakes and fruit cakes the most. When it comes to baking, I have to admit that I like making cakes that are not very labour-intensive. Such cakes include simple cheesecakes and fruit cakes.

Below, you may find the recipe of an orange cake, which falls into the category of cakes that require a bit of work. While the preparation of the cake batter is not complicated at all, it takes some time to chop the nuts and the candied fruits. You also have to remember about the orange cream, which takes time too. I like baking this orange cake for holidays, birthdays or special occasions.

Ingredients for orange cake with cream.

Walnut cake:

  • 50 g walnuts
  • 50 g candied fruits
  • 120 g all-purpose flour
  • a pinch of salt
  • 5 big eggs
  • 1 teaspoon of baking powder
  • 120 g icing sugar

How to make orange cake with cream.

All the ingredients used in the preparation of the walnut cake should be at room temperature.

Finely chop the walnuts and candied fruits with a knife. The nuts should have a consistency very similar to that of breadcrumbs.

Put the eggs, icing sugar and a pinch of salt into a bowl. Whisk for 4-5 minutes with a hand mixer or a kitchen robot until the ingredients become fluffy and creamy. At that point, add the sifted flour, baking powder, chopped nuts and candied fruit, all in small batches. Then, gently but as quickly as possible, fold in the added ingredients.

Line a round-shaped baking tin with baking paper and pour in the cake batter. Preheat the oven to 180 degrees Celsius and once hot, put in the cake. Bake it for 55 minutes to an hour or until the center of the cake is fully risen and it does not collapse when you touch it with your finger. Take the cake out of the oven, cool it down and cut it into two halves.

Cover the first half of the cake with the majority of the orange cream and place the other cake part on it. On the top, decorate the cake with the remaining cream, orange pieces and candied fruits. Put the orange cake in the fridge for a few hours so that the cream thickens properly.

Good to know when making orange cake with cream.

You can use any flavour of candied fruit for making the walnut cake. It can be candied orange peel, but it can also be other fruits. Mango, papaya, lime and other candied fruits, including fruit mixes, will all work well in this cake.

I baked the walnut cake in a round-shaped baking tin with a diameter of 21 centimetres.
