Shortcrust tartlets are made from flour , butter, icing sugar and yolks pastry. The shortcrust pastry can be prepared in just a few minutes, so it is not particularly time-consuming. Once the pastry is ready, place it in the fridge for a while to let it rest. Subsequently, little circles are cut out of the pastry, which are used to fill up metal molds. The tartlets are baked in a well-preheated oven for between 15 and 20 minutes. Of course, it all depends on how thick the pastry is. I like it when the pastry is well-baked, which is why I usually keep my tartlets in the oven for 20 minutes.

Ingredients for pastry crust.
- 120 g unsalted butter
- 250 g all-purpose flour
- a pinch of salt
- 2 big egg yolks
- 80 g icing sugar
- margarine and flour for greasing the pastry cases
How to make shortcrust pastry tartlets.
Sift the flour and icing sugar, pour it onto the pastry board. Add a pinch of salt and cold, diced butter. Chop the ingredients with a knife until they start coming together. At that point, add the egg yolks and form a pastry. Wrap the pastry with cling film and put it in the fridge for 30 minutes.
After removing it from the refrigerator, roll out the pastry to a thickness of about 3 millimetres. Using a glass, cut out circles from the pastry and line the metal corrugated molds with them. Before putting the pastry into the molds, each mold should be greased with margarine and sprinkled with flour. After arranging the pastry in the molds, it is worth pricking it in several places with a fork or a toothpick. Thanks to this, the pastry will not lift up during baking.
Preheat an oven to 180 degrees Celsius and once hot, put the tartlets in. Bake them for 18 to 20 minutes. Put the baked tartlets on a metal grid and let them cool down for a few minutes. It is best to remove the tartlets from the molds when the molds are still warm but not hot.
The shortbread tartlets can be filled with whipped cream, chocolate cream, custard cream, fruit cream or any other cream that you like. You can decorate the top of the tartlets with fruit, pieces of chocolate, pistachios and lots of other additives. It depends on what they are filled with.
Good to know when making pastry tartlets.
The pastry dough can be made on a board or prepared with a food processor. The same applies to chopping the ingredients, they can be chopped by using a food processor. It is important that both chopping the ingredients and making the pastry dough take place relatively quickly and efficiently. Otherwise, the butter will start melting and it will be difficult to put together the ingredients, and as a consequence, extra flour will be needed, which may make the dough tough.
I used corrugated metal molds with a diameter of 7.5 centimetres and a height of 3.5 centimetres.
