Baked pumpkin
Pumpkin is a vegetable I eat very often in the fall. I usually bake it and use it as puree to prepare various dishes such as soups, cakes and sauces. Recently, I baked a pumpkin with garlic and olive oil and instead blending it, I cut it up into cubes and served it like that. Pumpkin prepared in this way can be a great snack for lunch as well as a tasty addition to main dishes.

Ingredients for baked pumpkin.
- 600 g butternut squash
- 1 big head of garlic
- 3 tablespoons of olive oil
- 1 and 1/2 teaspoon of salt
- 1 teaspoon of pink pepper
How to make baked pumpkin with garlic.
Peel the pumpkin and cut it into about three-centimetre-big squares. Place them on a baking sheet, add unpeeled garlic cloves, drizzle with olive oil, pepper and salt. Set aside for 30 minutes, then put it in an oven preheated to 190 degrees Celsius for an hour. Stir the pumpkin from time to time while baking. Once baked, remove the garlic and blend it to a uniform consistency. Serve the pumpkin with garlic puree.

Good to know when making baked pumpkin.
I have gone for butternut squash which is a type of pumpkin. You can of course use any kind of pumpkin.
I only peeled the garlic after it was baked.
