  • 6 large eggs
  • 180 g crystal sugar
  • 240 g all-purpose flour
  • 1 teaspoon of baking powder
  • 120 g sunflower oil
  • 1 packet of vanilla sugar (16 g)

  • 500 g plums
  • 800 g apples
  • 40 g crystal sugar
  • 40 g instant semolina
  • 1 tablespoon of lemon juice
  • 3/4 teaspoon of cinnamon

How to make apple sponge cake with plums.

Grate peeled apples on a large holes grater. Cut washed and pat-dried plums in half, remove their pits and cut the fruit into pieces. Put the grated apples, sliced ​​plums, crystal sugar, lemon juice and cinnamon in a pot. Fry on a medium heat for about 20 minutes or until the juice from the fruit evaporates. Then, add in semolina, mix it quickly and fry for 30 seconds. Cool down the fried fruits.

Place eggs, crystal sugar and vanilla sugar in the bowl of a kitchen mixer. Whisk first for 10 minutes, then gradually pour in the oil in a thin stream, while whisking constantly. Next, mix in the sifted baking powder and all-purpose flour, just not all at once but in batches.

Line a baking tin with baking paper, then pour half of the sponge cake batter into it, level it and when ready, place it in an oven preheated to 175 degrees Celsius for about 25 minutes. Once finished, remove the baked cake from the oven and immediately spread the fried fruit on it, level it and cover with the remaining half of the cake batter, spreading it evenly. Place the cake back in the oven, that should be now preheated to 170 degrees Celsius, and bake it for 40-45 minutes or until a toothpick comes out clean (sponge layer). Cool down the baked apple sponge cake with plums, and when cooled, sprinkle with powdered sugar.
