Eggs stuffed with caviar cream
My suggestion for a cold egg dish is colourful eggs in red cabbage marinade stuffed with cream and black caviar. The eggs look beautiful on a plate and have a delicious taste. They can be served as a snack or on the Easter table. Preparing these marinated eggs is very simple, but you should wait a bit for the result because the eggs covered with the marinade should be left in the refrigerator for 24 hours.
The egg marinade is based on red cabbage, vinegar, water, sugar, salt and bay leaves. After chopping, I place the cabbage in a pot, add the remaining marinade ingredients, cook for a while and then cool. I put the hard-boiled eggs in a medium-sized jar, pour the marinade over them and put them in the fridge. The last element of this dish is the cream with which I fill the marinated eggs. Ingredients for eggs stuffed with caviar cream.
- 200 g red cabbage
- 50 g crystal sugar
- 1 teaspoon of salt
- 250 ml rice vinegar
- 800 ml water
- 2 bay leaves
- 4 hard-boiled eggs
- 1 tablespoon of black caviar
- 2 tablespoons of mayonnaise
To decorate.
- black caviar
- parsley

How to make eggs stuffed with caviar cream.
Put the red cabbage cut into strips, sugar, salt, pour in rice vinegar, water and add bay leaves into a pot. Bring it to a boil, then simmer on low heat for 5 minutes. Then, let it cool.
Place hard-boiled eggs in a medium-sized jar, pour cold marinade from the pot over them, close the jar and place in the refrigerator for 24 hours. After removing them from the refrigerator, remove the eggs from the marinade, gently wipe them with a paper towel to dry them of any excess marinade, then cut each in half. Remove the yolks from the eggs, place them in a bowl and add mayonnaise. Mash with a fork – you can also rub the whole thing through a thick sieve. Add caviar to the cream and mix. Place the finished cream in a pastry bag, then fill the egg halves with it. Decorate the whole thing with caviar and parsley on top. Keep the eggs in the refrigerator before serving.

In this recipe, I use medium-sized eggs and hard-boil them for 9 minutes.
I do not season the egg yolk cream with salt, because the caviar added to the cream is salty.
