Cracovian salad
Cracovian salad, a combination of smoked pork sausage with pickle, egg, potato, and green onion. Seasoned with salt and pepper, it also contains mayonnaise, yoghurt and mustard. The main ingredients of the salad can be either chopped or grated on a large-mesh grater. Sometimes I decide on one, sometimes the other option. Grating the ingredients makes the salad thick and takes on a compact consistency. On the other hand, cutting the ingredients gives the salad a creamier consistency, and each of its elements can be individually felt under the tooth. Ingredients for Cracovian salad.
- 400 g Cracovian sausage
- 500 g cooked potatoes
- 150 g pickles
- 3 hard-boiled eggs
- 2 green onions
- 100 g natural yoghurt
- 3/4 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of mustard
- 100 g mayonnaise

How to make Cracovian salad.
Remove the skin from the Cracovian sausage, then grate the sausage on a large grater or cut it into cubes. Grate the hard-boiled eggs on a large grater or cut them into cubes. Grate the peeled pickles and the cooked and peeled potatoes on a large-mesh grater or cut them into cubes. Finely chop the green onion. Put the natural yoghurt, mustard, mayonnaise, eggs, potatoes, sausage, pickles, onion, salt and pepper in a large bowl. Mix all the ingredients thoroughly. Keep the salad in the fridge before serving.

Good to know when making Cracovian salad.
I cook the potatoes with their skins on for less than 30 minutes from the moment the water starts boiling. They are usually large potatoes, hence the cooking time.
I make this salad with “L” size eggs.
