Pasta with quark cheese and bacon
Pasta with white quark cheese and bacon or túrós tészta or túrós csusza, is a traditional and tasty dish of Hungarian cuisine. I suspect that if it wasn’t for my Hungarian husband, I would not know many of the dishes that Hungarians eat up to this day.
At home, the situation is always as follows: my husband says to me – “I would eat this and that, it’s a Hungarian dish I haven’t eaten for quite a while, can you cook it sometime”? I must note here that I have no idea about most of the Hungarian dishes, so I have to ask my mother-in-law or look for recipes in the cookbook or on the Internet how to make them. I admit, I have a cookbook with Hungarian cuisine that my husband gave me once. The book, of course, contains recipes for Hungarian cuisine, just in case I wanted to cook something for him and did not know how 😀
Today’s recipe is in fact for a very simple and easy-to-prepare dish. It is pasta with fried bacon, quark cheese and sour cream. A simple but also not too expensive meal that you can serve for lunch or dinner.

Ingredients for pasta with cheese and bacon.
- 500 g square-shapped pasta
- 300 g raw bacon
- 400 g quark cheese
- 300 g sour cream
- 1 tablespoon of salt
- 1/6 teaspoon of black pepper
- 3/4 teaspoon of salt
How to make pasta with cheese and bacon.
Cook the pasta in water with a spoonful of salt as per the instructions on its package. The pasta should be cooked al dente. The cooking should take about 7 minutes from the moment the water starts boiling (depending on the size of the pasta). Pour the cooked pasta on a colander and rinse it with cold water, then set it aside to drain.
Put the bacon cut into small cubes into a frying pan. Fry over a medium heat until the bacon is well melted and crispy.
Transfer the pasta into a large bowl, add 3/4 teaspoon of salt, pepper, crushed quark cheese and fried bacon (I didn’t add all the bacon fat, but one tablespoon only). Gently mix all ingredients together. Serve the pasta with sour cream, sprinkled with bacon and more quark cheese.

Good to know when making pasta with quark cheese and bacon.
Do not mix the sour cream with the pasta, but only serve it on top of it.
If you find the pasta to be under salted, simply add more salt. I don’t like overly salty dishes and usually prefer less than more when it comes to salt.
The best type of pasta you can use in this dish is square-shaped one. It is not a must though and you can use any other type of pasta as well.
