Bread and butter pudding
If you have leftover stale bread or rolls and don’t want to throw them away, prepare this delicious bread and butter pudding.
I’m sure that I am not the only one having bread leftovers at home, be it rolls or sweet bread. Sometimes, I dry these leftovers and make breadcrumbs from them. However, when the bread is still suitable for preparing anything other than breadcrumbs, I try to do that. My favourite way to turn stale bread into something tasty is to use it in a pudding.
The very idea of pudding comes from the English bread and butter pudding, i.e. bread spread with butter, dipped in a bath of eggs, milk and spices. Personally, I avoid large amounts of butter when making my version of English pudding. Instead, I go for either fruit or chocolate. I recommend you to try making this pudding at least once, I bet you will be coming back to the recipe a lot in the future.

Ingredients for bread and butter pudding.
- 500 g bread or sweet buns
- 100 g dark chocolate
- 500 ml coconut milk
- 500 ml milk
- 3 tablespoons of melted butter + additional tablespoon for greasing the tin
- 1 teaspoon of vanilla extract
- 3 egg yolks
- 3 tablespoons of light brown sugar
How to make bread and butter pudding.
Cut the bread into smaller pieces, dice the chocolate into small cubes.
Pour milk, coconut milk, egg yolks, brown sugar, vanilla extract and melted butter into a bowl and mix well. Add pieces of bread and chocolate to it, then stir and set aside for 15 to 20 minutes.
Grease a baking tin (I used an ovenproof dish) with some butter and put the bread with milk and chocolate into it. Once done, place it in an oven preheated to 180 degrees Celsius for 1 hour.
Serve the baked pudding sprinkled with icing sugar or with vanilla ice cream.

Good to know when making bread and butter pudding.
I used challah, which is a type of sweet bread. I had stale challah at home and it was the perfect basis for my pudding.
Sometimes I make this pudding without chocolate and with blueberries or cherries instead but you can also use many other fruits as an addition in the pudding.
