Polenta chips

This is my not-so-recent discovery – polenta chips, which are as tasty or maybe even tastier than those made from potatoes. All you need to make these chips are literally a few ingredients among which the most sophisticated one is probably Parmesan cheese. On top of it you need polenta, butter, water and a bit of salt. That is all.

Ingredients for polenta chips.

  • 150 dag polenta
  • 1 l water
  • 40 g Parmesan cheese
  • 1 teaspoon of salt
  • 25 g butter + extra for greasing the dish
  • sunflower oil for frying

How to make polenta chips.

Pour water into the pot and bring it to boil. When the water begins to boil, add the polenta. Cook on a medium heat for 3 minutes, stirring constantly. Cover the pot with a lid and cook for 1.5 minutes. Remove the lid and cook uncovered for 3 minutes, stirring constantly. Put the lid on for another minute then remove the lid again and add salt and butter. Stir until the butter is completely dissolved. Then add Parmesan cheese, mix it all up and cover the pot with the lid. Keep on the heat for additional minute.

Pour the polenta mixture into a square or rectangular-shaped dish, cover with aluminium foil and set it aside until it cools completely. Once the polenta is cooled down, place it in the fridge for an hour. Afterwards, remove the polenta from the fridge and cut into pieces.

Pour oil into a pan and heat it up. Once hot, place the polenta chips on it. Fry on a medium heat on both sides until golden brown. Place the fried chips on a paper towel to drain the excess oil. Serve with freshly ground black pepper, sauce of your choice or as an addition to meat dishes.

Good to know when making polenta chips.

I used a 23.5 by 23.5 centimetre-big heat-resistant dish.

I cut the polenta into quite thick pieces. They were between 1.5-2 centimetres wide. Do not cut it too finely, otherwise they might fall apart during frying.

The polenta pieces should be placed on the frying pan with some space kept between them.
