Years back leek salad was quite popular, I think almost everyone was preparing it back then.

This salad can be made from generally available and relatively cheap ingredients. Neither the potatoes nor the leek itself cost a fortune and they are available almost everywhere.

I like making this salad in autumn as that is the time when I can buy the best pieces of leek.

Ingredients for leek salad.

  • 2 medium-sized potatoes
  • 1 big leek
  • 1 big apple
  • 6 hard boiled eggs
  • 4 medium sized pickled cucumbers
  • 1,5 teaspoon of salt
  • 1/6 teaspoon of black pepper
  • 4 tablespoons of sour cream
  • 2 teaspoons of Dijon mustard
  • 8 tablespoons of mayonnaise

How to prepare leek salad.

Wash, dry, and cut the leek along, then slice it into very thin strips. Peel the pickles and cut them into medium-sized cubes. Cut the boiled eggs into small cubes. Peel the apple and cut it into medium-sized cubes.

Boil the potatoes in their skin. When cooked, drain the water and let them cool down. Peel and cut them afterwards into very small cubes.

Transfer all the chopped ingredients to a bowl. Add salt, pepper, mayonnaise, cream and mustard. Mix thoroughly. Keep the salad in the fridge.

Make sure that the leek is well washed. Sometimes it happens that there is a lot of soil between its layers.

I used pickles and I would not suggest replacing them with gherkins. Gherkins do not go well in this salad.
