You have green asparagus at home and you are wondering what to prepare from it? I recommend making a simple salad.

The salad which I encourage you to make is a light, fresh salad, which consists of green lettuce, lambs lettuce, asparagus and hard-boiled eggs. As you can see, you don’t need a diverse selection of ingredients to prepare this salad.
I drizzled the salad with honey, mustard and lemon juice dressing and sprinkled it on top with nigella seeds. The seeds gave the salad a slightly bitter taste. I served the salad as an addition to a chicken dish. However, you can also eat it by itself, because the ingredients used to make this salad are quite filling, despite their small number.

Ingredients for green asparagus salad.
- 10 pieces of green asparagus
- a pinch of salt
- a pinch of crystal sugar
- 1 head of lettuce
- 2 bunches of lambs lettuce
- 3 big eggs
- nigella seeds for sprinkling
Sauce:
- 1 teaspoon of Dijon mustard
- 1 tablespoon of honey
- 1 tablespoon of lemon juice
- 3 tablespoons of olive oil
How to make asparagus salad.
Pour water into a pot, add salt and sugar and bring it to a boil. When the water starts boiling, add the asparagus. Cook for 6 minutes. After that, pour the asparagus into a colander, pour cold water over it and let it cool down.
Boil the eggs until hard-boiled or slightly runny in the middle. It took me 6 minutes. Pour cold water over the boiled eggs, cool them down, then peel them. Cut each one in half.
Put the mustard, lemon juice, honey and olive oil into a cup. Mix them very well.
Put the lettuce leaves, lambs lettuce, asparagus cut in halves and egg halves into a bowl. Pour the dressing over the ingredients in the bowl and sprinkle with nigella seeds on top.
Good to know when making green asparagus salad.

I used XXL size eggs and boiled them for 6 minutes in water salted with a pinch of salt. If you want the eggs to be harder inside, keep them in the water for a bit longer. I think that 6 minutes is enough, the eggs will have an almost perfect inside after that time.
Do not use the stringy part of the asparagus. Before boiling the asparagus, cut off about 2 centimetres from the bottom of each one.
I used natural honey with floral flavour.
I opted for the Little gem romaine lettuce but you can use any type of lettuce.
