The most common addition I serve to meat and fish dishes are undoubtedly all kinds of slaws, but they are closely followed by stewed and boiled vegetables. One of the simple vegetarian dishes that perfectly complements the taste of fried fish and meat are cooked vegetables in cream sauce. This dish can be prepared with any vegetables of your choice. I use peppers, mushrooms and carrots, and I also add a bit of onion and garlic. I cut some of the vegetables into pieces, grate some of them, and when ready, I fry them all in olive oil. Next, I add the spices, thicken with potato flour combined with cream and water and cook together for a few minutes until the vegetables soften.

Ingredients for vegetables in sauce.

  • 250 g mushrooms
  • 2 big cloves of garlic
  • 100 g carrot
  • 50 g onion
  • 300 g peppers
  • 1/4 teaspoon of chili flakes
  • 1 flat teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 200 ml water
  • 50 ml cream (30%)
  • 1 full tablespoon of potato flour
  • 2 tablespoons of olive oil

How to make vegetables in sauce.

Grate the carrots on a large grater, cut the onion into half-slices and the mushrooms and peppers into larger pieces. Press the garlic through a press. Pour olive oil into a pot, add the chopped vegetables, and fry over a medium heat for a moment. Add chili flakes, salt and pepper and fry for 5 minutes, stirring occasionally. Mix the potato flour with the cream in a cup, then pour it over the vegetables. Stirring occasionally, cover and cook a over low heat for 10 minutes.
