Vegan strawberry millet pudding is a dish that you can make only from four ingredients. This pudding can be served both for dessert, supper or as a snack. I start the preparation of the strawberry millet pudding by cooking the millet grains. I cook them in milk with a little sugar until the whole thing gets quite thick and the millet becomes very soft. Once cooked, I cool it down, then combine them with strawberries in a blender. This homemade pudding is very easy to prepare and it tastes great. Ingredients for strawberry millet pudding.
- 60 g millet grains
- 400 ml rice milk
- 1 tablespoon of crystal sugar
- 350 g fresh strawberries
How to make strawberry millet pudding.
Pour the millet into a bowl, pour cold water over it and set it aside for 10 minutes. After that, rinse then drain off the water.
Pour the milk into a pot, add sugar and place it on the heat. When the milk in the pot starts to boil, add the rinsed millet. Bring it to a boil, reduce the heat to low and, stirring constantly, cook until the groats are tender – it took me 20 minutes. After that, remove the millet from the heat and let it cool down.
Rinse the strawberries in water, remove the stalks and cut the fruit into small pieces. Put the strawberries and cooled down millet into a tall cup and blend. Once blended, rub the pudding through a fine strainer. Serve the pudding with fresh strawberries.
Good to know when making strawberry millet pudding.
The strawberries you use should be very ripe and very sweet. If they are not, I suggest you add a little more sugar than one tablespoon.
I serve strawberry millet pudding cold, which is why I mix the cold millet with strawberries. If you like warm puddings, I suggest mixing the strawberries with hot millet.
You can replace the rice milk with soy or oat milk.
The fresh strawberries can be replaced with frozen ones, but in that case, the amount of sugar should definitely be increased, and the strawberries should be boiled before combining with the millet. The strawberries themselves can be replaced with other fruits as well, such as cherries and raspberries.
