Soup with cauliflower, sweet potatoes and green peas is a filling vegetarian dish that smells beautiful and tastes fantastic. Sweet potatoes, cauliflower and green peas go great with each other and with the spices used for seasoning of the soup. In this soup, you will find cut vegetables, there is no need to cream them in a blender.
I start the preparation of the soup by frying onion in oil, then I add the potatoes, cauliflower and spices such as turmeric, cumin and chili to it and fry together for a moment. After that I add green peas along with salt, pepper and broth and simmer until the vegetables are soft. In this soup there is no shortage of cream, which I add just before removing the soup from the heat. I serve the cauliflower, sweet potatoes and green peas soup sprinkled with parsley. I don’t serve it with bread, neither do I add croutons or any other additions. In my opinion, there is no need for it at all, because the soup itself is very filling. I recommend serving this soup for as a first dinner course or for lunch.

Ingredients for cauliflower, sweet potato and peas soup.
- 1 tablespoon of oil
- 1/2 teaspoon of caraway seeds
- 100 g onion
- 250 g cauliflower florets
- 100 g green peas
- 400 g sweet potatoes
- 1/2 teaspoon of turmeric powder
- 100 ml soup cream
- 1 and 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of chili flakes
- 1,5 l vegetable stock
- parsley for serving
How to make cauliflower, sweet potato and peas soup.
Pour the oil into a large pot, add the diced onion and fry over a medium heat for about 5 minutes. Stir the frying onion occasionally so that it doesn’t burn. Next, add the diced sweet potatoes, cumin, chili flakes, cauliflower florets and turmeric to it. Continue to fry for 2-3 minutes, then add the vegetable stock, green peas, salt and pepper. Bring the soup to a boil and simmer it over a low heat for 15 minutes. After this time, pour in the cream and keep the whole thing on heat for another 2 minutes. Serve the soup sprinkled with chopped parsley.

Good to know when making cauliflower, sweet potato and peas soup.
You can use fresh or frozen peas when making this soup. I use frozen peas most of the time. A few minutes before adding it to the soup, I take the peas out of the freezer and let them sit at room temperature for a while. The peas can also be added to the soup right after they have been removed from the freezer.
The chili flakes can be replaced with finely chopped fresh chili pepper.
