Aromatic beef and poultry broth served in a slightly unusual way, because it is with tortellini dumplings. The basis of this broth are two types of meat: beef and poultry. As for beef, you can select from a brisket or a shoulder, whereas the poultry should be of the best quality, which is why it is necessary to use free-range chicken. Chicken bought at the supermarket will not work here. In addition to meat, there are also vegetables in the broth. I don’t add a lot of vegetables, but the right amount will give the broth a pleasant vegetable flavour.

This beef and chicken broth is perfect for Sunday lunch. The given amounts of ingredients result in a large portion, which is why it works perfectly at family celebrations. I encourage you to prepare this dish, and below I leave the recipe for beef and chicken broth with tortellini.

Ingredients for beef and poultry broth with tortellini.

  • 500 g beef e.g. leg, shoulder, brisket
  • 500 g free-range chicken legs
  • 250 g carrot
  • 150 g onion
  • 200 g parsnip
  • 150 g celeriac
  • 2,5 l water
  • 2 bay leaves
  • 3-4 juniper berries
  • 1 tablespoon of salt
  • 1/2 teaspoon of black pepper
  • 150 g leek
  • a bunch of parsley

Additionally:

  • 250 g tortellini e.g. with ham

How to make beef and poultry broth with tortellini.

Rinse the meat thoroughly in cold water, then put it in a pot with peeled carrots, onions, parsley and celery. Pour water, add juniper berries and bay leaves. Bring it to a boil, reduce the heat to very low and simmer for an hour. Afterwards, add the leek and continue cooking for another 3 hours. At the end of cooking, add salt, pepper and a bunch of parsley.

Cook the tortellini according to the instructions on its packaging – I cooked mine for 6 minutes. Serve the cooked beef and poultry broth with tortellini dumplings, vegetables and broth meat.

Good to know when making beef and poultry broth with tortellini.

After the whole thing boils, a gray foam called scum can collect on the broth. It should be collected with a soup spoon or slotted spoon. By removing the foam, the broth will be clearer.

The broth should be cooked with uncovered lid, on a very low heat. The boiling broth should cook very slowly, the whole thing should literally only slightly pop.

This beef and chicken broth can be served with any kind of tortellini dumplings. This time, I went for dumplings stuffed with ham, but dumplings filled with spinach or dried tomatoes will work just as well as an addition to this broth.
