Tartar sauce is a combination of mayonnaise and vegetables marinated in vinegar. Depending on which version of the sauce you are having, you will find gherkins, capers, parsley or chives in it. I have always prepared this sauce only with pickled mushrooms and gherkins. The recipe below is for that version of the sauce.
Ingredients for tartar sauce.
- 100 g pickled mushrooms
- 40 g white onion
- 100 g gherkins
- 100 g mayonnaise
- salt to taste
- black pepper to taste
- 50 g sour cream
How to make tartar sauce.
Chop the gherkins and mushrooms finely and squeeze out the excess juice from them. Dice the onion into very small cubes. Put the chopped vegetables, mayonnaise, sour cream, a pinch of salt and pepper into a bowl. Mix well. Store the sauce in the fridge.
Good to know when making tartar sauce.
I grated the gherkins on a large-mesh grater then squeezed the juice out of them. I did not peel them.
You can add capers, chives, parsley, lemon juice and mustard to the sauce if such is your preference.
I was very careful when adding salt and pepper. Both gherkins and mushrooms have an intense flavour and in my opinion the amount of salt or pepper should be kept to a minimum.
I served the sauce with hard-boiled eggs. Tartar sauce is also great when served with fried fish, sandwich spread, or as a garnish to cold meats or herring.
