Aioli
Aioli is a garlic sauce based on mayonnaise. It is very popular in Spain, France and Italy. The base of the sauce is oil, garlic, lemon juice and salt. Often, eggs or egg yolks are also added to it when making it. It’s a good idea to start preparing the sauce by finely chopping the garlic, then combining it with lemon juice, salt, egg and oil added in small rivulets. Ingredients for Aioli.
- 4 big cloves of garlic
- 2 tablespoons of lemon juice
- 1 egg
- 150 ml sunflower oil
- 1/2 teaspoon of salt
How to make Aioli.
Put the mashed garlic into a bowl, add salt and lemon juice to it. Stir, then set aside for 5 minutes. After that, transfer it to a tall container, add the egg and, using a hand blender, mix, while gradually pouring in the oil. Blend together for a few minutes until you get a thick sauce with a homogeneous, creamy consistency.

Good to know when making Aioli.
Before adding the egg to the sauce, it must be tempered in boiling water for at least 10 seconds.
You can replace the sunflower oil with olive oil.
