Lard with onion is a dish that I make quite rarely. Even though, I love its taste, I can’t imagine eating it every day. Traditionally, I serve it with bread and pickled cucumber, and it works best as a snack. This dish is very easy to make, and to prepare it, you need a piece of pork fat, onion and salt. After cutting into cubes or grinding in a meat grinder, the pork fat is melted until it starts to develop a colour. At that point, the onion is added and all is fried together until crisp cracklings are obtained and the onion becomes golden brown. Once done, the lard is seasoned with salt to taste, then poured into jars or containers and cooled down. The lard can be kept in the fridge for up to a month. Ingredients for lard with onion.
- 200 g onion
- 500 g pork fat
- 1/2 teaspoon of salt
How to make lard with onion.
Cut the pork fat into small cubes or grind it in a meat grinder. For grinding, you can use a sieve with larger or smaller holes. Put pieces of pork fat into a frying pan and fry over a low heat, stirring from time to time for about 15-20 minutes. When the pork fat starts to get a light golden colour, add the onion cut into medium sized cubes. Continue to fry over a low heat, stirring frequently, until the onion obtains a golden colour. After adding the onion to the pork fat, I continued frying it all for an additional 30 minutes. Season the fried onion with cracklings with salt, then transfer it to a jar and leave it to cool down. Keep the lard with onion in the fridge.

Good to know when making lard with onion.
Pork fat is good for the preparation of the lard, but it can also be made from bacon. In addition, you can add pieces of cooked pork meat to the lard, thanks to which the lard will have a richer taste and texture.
I usually grind the pork fat from which I make the lard in a meat grinder. The fat melts faster from the pork fat prepared in such a way. If you cut the pork fat into cubes, during its melting you have to check from time to time whether it is melted enough, before adding onion to it. The pieces of pork should not be too crispy when adding onion to it, because after adding the onion, they must fry with it for some time.
