Smoked sprats sandwich spread
If you like sandwich spreads, you will like this one. It is based on smoked sprats and tomatoes. It is seasoned with a bit of salt, pepper and herbs de Provence. I serve it on bread, but you can use a baguette, toast, bread, rolls or crackers. As smoked sprats have an intense taste and a characteristic smell of smoked fish, I serve this spread with pickled onion and more sprouts. These two little additions go perfectly with the taste of this paste and make its taste more interesting.

Ingredients for smoked sprats sandwich spread.
- 250 g tomatoes
- 1 tablespoon of olive oil
- 1 teaspoon of herbs de Provence
- 100 g smoked sprats
- a pinch of salt
- a pinch of black pepper
Additionally:
- baguette
- a bunch of sprouts
- a few smoked sprats
- 2 tablespoons of pickled red onion

How to make smoked sprats sandwich spread.
Cut the tomatoes into small cubes, put them in a pot along with the olive oil and herbs de Provence. Simmer over a medium heat for 20-25 minutes, or until the tomato juice has almost completely evaporated, then cool it down.
Put smoked sprats, fried tomatoes, a pinch of salt and pepper into a tall mug. Blend to a creamy, uniform consistency.
Cut the baguette into thin slices, spread each with sprat paste. Arrange the sprouts, pickled onion and smoked sprats on the paste.

The weight of sprats in the list of ingredients is their weight after removing the tails and heads. Some people also mix in the tails and heads of these fish, but for me they are a bit hard, so I do not add them to the paste.
Before spreading the spread, the baguette can be lightly baked in the oven or grilled.
Any type of sprouts pairs deliciously with this sandwich spread. You can opt for broccoli, radish, watercress, alfalfa, mung bean or even beetroot sprouts.
