Zucchini and wild rice salad

Zucchini and green beans is a combination that works fantastically in any salad. This last time I made this salad I was not able to buy fresh beans – no big deal, as frozen ones work just as well for this recipe. I also added feta cheese and pecan nuts to the salad. I flavoured it only with a simple joghurt based sauce, some salt, pepper and garlic .

Ingredients for zucchini salad.

  • 350 g zucchini
  • 200 g frozen or fresh green beans
  • 3 celery sticks (100 g)
  • 50 g broccoli sprouts
  • 100 g wild rice
  • 2 teaspoons of salt
  • 50 g pecan nuts
  • 200 g feta cheese


  • 150 g natural joghurt
  • 1 big garlic clove
  • a bunch of fresh chive
  • 1 teaspoon of salt
  • 1/6 teaspoon of black pepper

How to prepare zucchini and rice salad.

Cut the zucchini into 5 centimetres long and 1 centimetre wide sticks.

Pour water into a pot, add a teaspoon of salt and bring it to boil. When the water starts boiling, add the zucchini and the green beans. Bring it to boil again and cook it over a low heat for 9-10 minutes, after which the cooked vegetables can be poured into a colander to let them cool down.

Pour wild rice in a bowl, add cold water and set aside for 10 minutes. After 10 minutes, drain the water from it.

Pour water into a pot, add a teaspoon of salt, bring to boil then add the rice. Boil for 35 minutes on a low heat. Afterwards, pour the cooked rice into a colander and let it cool down.

Put the rice, zucchini and beans into a bowl. Add feta cheese cut into big dice, pecans, broccoli sprouts and finely chopped celery.

Combine the joghurt with mashed garlic, salt, pepper and finely chopped chives in a cup. Pour the sauce over the ingredients in the bowl. Mix well.

Good to know when making zucchini and rice salad.

When cooking wild rice, pour a fair amount of water to the pot. The rice should float in the water, the grains should not be able to stick together.

You can replace the pecan nuts with walnuts.

I used frozen green beans but of course fresh ones will work great here as well.
