This recipe is for a salad very popular in Poland made from red cabbage. There are two schools of making this cabbage salad: Silesian and Greater Poland. Fried bacon is added to the Silesian version, whereas in the Greater Polish version they add apples. I like both versions of this cabbage salad and I make both version at home from time to time. I serve the cabbage as an addition to roasted meats (duck, pork neck, roulades) or to meat made with sauces.

Ingredients for warm red cabbage salad.
- 1 kg red cabbage
- 2 tablespoons of apple cider vinegar
- 100 g onion
- 3 bay leaves
- 2 berries of allspice
- 2,5 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of clarified butter or oil
- 250 g apples
- 2,1 l water
- 1 teaspoon of crystal sugar
How to make warm red cabbage salad.
Put the onion cut into small pieces and the clarified butter in a pan. Fry over a medium heat for 6-7 minutes.
Finely shred the cabbage on a shredder or cut it with a knife and put into a large pot. Add 2 litres of water and 1.5 teaspoons of salt to it then cook for 20 minutes or until the cabbage is semi-soft. At that point, pour out the water from the cabbage and add 100 ml of fresh water. Also add fried onion, allspice, sugar, 1 teaspoon of salt, pepper, bay leaves and diced apples with the skin on. Simmer covered on a low heat for 15-20 minutes. Then add the apple cider vinegar and continue simmering uncovered for 10 minutes. Serve the cabbage warm.

Good to know when making warm cabbage salad.
Depending on how thick pieces the cabbage are shredded into, it may require more or less time on the heat. I chopped the cabbage very finely, yet it took me about 50 minutes to cook and to stew it. If you prefer the cabbage to be a little harder, keep it on the heat for a shorter time.
