Sometimes I have these days when I fancy something light for dinner. In such cases, any kind of salad is a great choice, such as this simple salad with Stilton cheese and pear. The basis of today’s salad is romaine lettuce and radicchio lettuce. Romaine lettuce is a lettuce with rather long, oblong and brittle leaves. Radicchio, also known as red chicory, is a lettuce with round leaves and bitterness characteristic of chicory. Both of these salads go well with cheese and fruits so that is the combination I opted for this time. This salad can be served as an accompaniment to dinner or as a main course. It works well when served for lunch or dinner. I recommend you the following recipe for a Stilton cheese and pear salad.
Ingredients for Stilton cheese and pear salad.
- 150 g radicchio
- 150 g romaine lettuce
- 300 g soft pear
- 150 g Stilton cheese
- 100 g celery stalks
- 2 tablespoons of honey
- 3 tablespoons of olive oil
- a pinch of salt
- 2 tablespoons of lime juice
How to make Stilton cheese and pear salad.
Cut the radicchio lettuce into 3-centimeter large pieces, put them in a bowl, add very cold water and set it aside for 10 minutes. After that time, pour the lettuce into a colander, dry it and transfer it into a bowl. Add romaine lettuce cut into similar-sized pieces. Also cut the pear, Stilton cheese and celery stalks and add it to the salad.
Combine honey with olive oil, a pinch of salt and lime juice in a cup. Drizzle the ingredients in the bowl with the dressing and mix gently.
Good to know when making Stilton cheese and pear salad.
It is very important that the radicchio lettuce is soaked in cold water before adding it to the salad. Soaking the radicchio will remove its rather bitter taste.
Before cutting it and adding it to the salad, I washed then dried and cut the pear with its skin on.
You can replace lime juice with lemon juice.
