Oi muchim is a spicy cucumber salad that is perfect for dinner. This simple Korean salad is quick to prepare, minimally labour-intensive and tasty. The basis of oi muchim is cucumber mixed with spices such as gochugaru and garlic, as well as soy sauce, vinegar and sesame oil. Cut the cucumber into slices, add salt and set aside for a while to remove any bitterness and excess juice. Combine the cucumber slices in a bowl with the remaining salad ingredients, mixing them gently. Serve the salad immediately after preparation or keep it in the refrigerator before serving. - 300 g salad cucumber (1 piece)
- 1/2 teaspoon of salt
- 1 teaspoon of gochugaru chili flakes
- 2 tablespoons of chopped green onion
- 1 big clove of garlic
- 3/4 teaspoon of crystal sugar
- 1 teaspoon of rice vinegar
- 1 tablespoon of toasted sesame seeds
- 2 teaspoons of sesame oil
- 1 tablespoon of soy sauce
How to make spicy cucumber salad – Oi Muchim.
Cut the washed, pat-dried cucumber into thin but not super thin slices, put them in a bowl, add salt and mix. Set it aside for 15 minutes, then place it in a strainer and squeeze out the juice released by the cucumbers. Mix rice vinegar, soy sauce, sesame oil, granulated sugar, mashed garlic, chili pepper, green onion and toasted sesame seeds in a large bowl. After that, add the cucumbers and mix gently.

I toasted the sesame seeds over a very low heat in a dry pan for 5 minutes, stirring them from time to time.
