I recently made quite a large jar of fermented cucumbers, too many to eat them all on a sandwich. So I had to use them also in some dish and it fell on the salad. A salad with fermented cucumbers turned out to be the right choice, because I could not only serve it for lunch, but also with grilled meat. Quite a large amount of it was eaten within two days. The salad, apart from the fermented cucumbers, also included tomatoes, chickpeas and pasta. I also added fresh herbs such as green onion and parsley, and seasoned the whole thing with yoghurt and garlic.

This simple pasta salad does not contain mayonnaise or meat. Therefore, it is also ideal for people who do not eat meat. An additional advantage that speaks for making this salad is the preparation time, because the whole thing will be ready in less than 25 minutes. Ingredients for pasta with fermented cucumbers and chickpeas.

  • 200 g orecchiette pasta
  • a small bunch of parsley
  • 200 g fermented cucumbers
  • a small bunch of green onion
  • 300 g tomatoes
  • 250 g canned chickpeas
  • 2 medium-sized cloves of garlic
  • 200 g Greek yoghurt
  • 1 and 1/2 flat teaspoon of salt
  • 1/2 teaspoon of freshly ground pepper

How to make pasta salad with fermented cucumbers and chickpeas.

Pour water into a pot, bring it to a boil, add 1/2 teaspoon of salt and put the pasta. Bring it to a boil again and cook for 15 minutes. Next, pour the cooked pasta into a colander, pour cold water over it and cool it down.

Drain the chickpeas from the brine, cut the tomatoes into medium-sized cubes and do the same with the fermented cucumbers. Finely chop the parsley and green onion. Mix the pasta with cucumbers, tomatoes, chickpeas, chopped herbs, add garlic, yoghurt, salt and pepper in a bowl. Chill the salad in the fridge.
