Niçoise salad
Niçoise salad is a light and fresh salad originating from the French city of Nice. The salad includes tomatoes, tuna, olives and hard-boiled eggs. Other popular additions that can often be found in the Niçoise salad are green beans, boiled potatoes, peppers and onions. Depending on the region or country, the composition of Niçoise salad may be slightly different. You can season the Niçoise salad with a light sauce based on olive oil. Ingredients for Niçoise salad.
- 250 g new potatoes
- 4 hard-boiled eggs
- 150 g green beans
- a small head of lettuce
- 200 g cocktail tomatoes
- 2 cans of tuna in brine (170 gr each)
- 15 black olives
- a bunch of parsley
Dressing:
- 3 tablespoons of olive oil
- 1/4 teaspoon of salt
- a pinch of pepper
- 2 tablespoons of lemon juice
- 1 tablespoon of French mustard
How to make Niçoise salad.
Put the potatoes into a pot, add water, bring it to a boil and simmer for 20 minutes. Then, pour the water from the boiled potatoes and let the potatoes cool down.
Put the green beans in a pot, add water, bring to a boil and cook for 10 minutes. Drain the water from the cooked beans and let the beans cool.
Wash the lettuce leaves, dry them, then place them on a serving platter. Arrange the cold green beans, quartered eggs, olives, pieces of tuna, quartered tomatoes and chopped potatoes into small pieces on the lettuce leaves.
Combine the olive oil with salt, pepper, lemon juice and French mustard in a cup. Pour the sauce from a cup over the vegetables on the dish. Garnish the salad with parsley.
