Mushrooms and green beans are both perfect as the main ingredient of many dishes. They are great in sauces, cooked, in soups or in salads. You can eat them all year round, because mushrooms are available fresh all the time, and beans, if not fresh, can be easily bought frozen.

This time I served mushrooms and green beans in a salad with eggs and feta cheese. I flavoured the salad with a cream sauce with only a bit of mayonnaise because I try using it as little as possible. Although, I personally love mayonnaise and can eat it straight from the jar, my husband is not a fan of it. But somehow he managed to endure the two spoons I added to the salad 🙂 I warmly recommend you this salad for the upcoming Christmas.

Ingredients for mushroom salad.

  • 400 g feta cheese
  • 1/2 teaspoon of black pepper
  • 400 g mushrooms
  • 1 and 1/2 teaspoon of salt
  • 3 green onions
  • 8 hard-boiled eggs
  • 400 g green beans
  • 2 tablespoons of olive oil
  • 3 big cloves of garlic

Cream sauce:

  • a pinch of salt
  • 4 tablespoons of sour cream
  • 2 tablespoons of lemon juice
  • 2 tablespoons of mayonnaise
  • 1/4 teaspoon of freshly ground black pepper

How to make mushroom salad with beans.

Clean the mushrooms and cut them into thin slices. Pour olive oil into a frying pan and put in the sliced mushrooms and mushed garlic. Fry over a medium heat for 6-7 minutes, then let it cool down and pour off any water that was produced during frying.

Pour water into a pot, add a teaspoon of salt and bring it to boil then put the beans in. Bring it back to boil and simmer for 8 minutes. Pour the cooked beans into a colander and let them cool down.

Put diced feta cheese, beans, mushrooms, finely chopped green onions, diced eggs, 1/2 teaspoon salt and pepper into a bowl.

In a mug, combine the cream, mayonnaise, lemon juice and a pinch of salt. Pour the sauce over the ingredients in the bowl and mix. Sprinkle the salad on top with freshly ground black pepper.

How to make mushroom and green beans salad.

Boil the eggs for 9 minutes in salted water to achieve a hard-boiled consistency.

In season, fresh green beans will be perfect for the salad. During the off-season, try frozen beans.
