Today I have for You recipe for delicious chicken salad.
Other than with chicken this salad is also made with sun-dried tomatoes and pasta. This salad is ideal for the summer season.
You can eat it on its own but it also goes well with grilled meat 🙂
Ingredients for chicken pasta salad.
- 1 cup of pasta shells (0.5 cm size)
- 2 chicken breasts
- 3 halves of marinated peppers
- 100 g of sunflower seeds
- 1 jar of dried tomatoes in olive oil (about 250 g)
- 1 teaspoon of Provencal herbs
- pinch of salt
- pinch of pepper
- 6 tablespoons of soy sauce (preferably light)
- 1 and 1/2 teaspoon of dried granulated garlic
- 1 teaspoon French mustard
- 1 tablespoon sunflower oil
How to make pasta salad with chicken.
Cook the pasta in lightly salted water. It needs to be al dente. Let it cool down.
Cut the chicken breast into cubes (about 2 cm), fry with 1 teaspoon of granulated garlic, herbs de Provence, pinch of salt and a black pepper. Be careful with the salt because the soy sauce, which we will add later is quite salty itself.
Cut dried tomatoes into small cubes.
Roast the sunflower .
Marinated peppers cut into small strips.
Sauce: Mix the olive oil from sun-dried tomatoes with half a teaspoon of granulated garlic, soy sauce and mustard.
Put all the ingredients into a bowl, pour the sauce and mix thoroughly.
Put in the fridge until chilled.

This salad is an ideal snack for all kinds of celebrations.
Usually I use a little less than a full jar of dried tomatoes but it is a matter of personal taste whether we prefer less or more of them. Often I increase the amount of marinated peppers because I like their taste 🙂 Also, be careful with soy sauce because if you add too much of it, it will simply make the salad over-salted.
