Broad bean salad
I was planning to plant broad beans in my vegetable garden this year, but in the end it didn’t work out for me. So I have to buy this vegetable at the supermarket or at the market. As broad beans are a seasonal plant, fresh ones can only be purchased during a relatively short period of time, mainly in the summer season. Broad bean seeds are quite large, oval in shape and pale green in colour. This legume is rich in a lot of vitamins, including fibber and potassium. The taste of broad beans is delicate, slightly sweet and has a mild nutty note. Although it can be eaten both fresh and cooked, the cooked form is the most frequently chosen form.
Broad beans are great in soups, salads, stewed with vegetables or with meat. Broad bean salad with sugar pea sprouts and parmezan cheese is a dish that will perfectly satisfy your hunger. I seasoned the salad with a bit of olive oil, lemon juice, mint leaves and chili flakes to taste. Ingredients for broad bean salad.
- 500 g broad beans
- 1 and 1/4 teaspoon of salt
- water for cooking
- 60 g sugar pea shoots
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 3 tablespoons of grated parmezan cheese
- 1 tablespoon of chopped mint leaves
- 1/2 teaspoon of chili flakes

How to make broad bean salad.
Pour water into a pot, add 3/4 teaspoon of salt and bring it to a boil. Put the broad beans into the boiling water and cook for about 12 minutes or until the broad beans are soft. Next, pour the broad beans into a colander, pour cold water and let them cool down.
Combine the cooked broad beans with sugar pea shoots and finely grated parmezan cheese in a bowl. Add chopped mint leaves and chilli flakes. Mix the olive oil, lemon juice, and 1/2 teaspoon of salt in a cup, then pour it into the ingredients in the bowl and mix. Keep the salad in the refrigerator.

Good to know when making broad bean salad.
The cooking time of broad beans depends on whether you cook fresh broad beans or frozen broad beans. Fresh, young broad beans cook quite quickly. After 6 minutes of cooking, it is worth checking whether broad beans are sufficiently cooked. Frozen broad beans and slightly older seeds will need between 10 and 15 minutes to cook.
