Potato and cheese cakes
Delicious potato and mozzarella cheese cakes that are soft on the inside and slightly crispy on the outside. Despite their name, these are not meatless cakes, because one of the ingredients is ham. These fried potato and cheese cakes are great served for dinner or at parties. They can be served with your favourite sauce, such as salsa, barbecue, cheese or garlic.
To prepare these cheese and potato cakes, start by boiling the potatoes, mashing them and letting then cooling them down. Only once they are cold should you add the remaining ingredients to the puree, form the mass into balls, coat them in breadcrumbs and fry. Serve immediately after frying when they are still warm or hot, because this is when the cheese has a melted consistency. Ingredients for potato and cheese cakes.
- 800 g potatoes
- 150 g grated mozzarella cheese
- 1 large egg
- 50 g potato starch
- a big bunch of chives (20 g)
- 1/2 teaspoon of sweet paprika powder
- 3/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 100 g slices of ham
Additionally:
- 80 g panko
- 1-2 eggs
- oil for frying

How to make potato and cheese cakes.
Place peeled, diced potatoes in a pot, and pour in enough water to cover them completely. Bring it to a boil and cook for 20 minutes. While the potatoes are cooking, finely chop the chives and cut the slices of ham. Transfer the cooked potatoes to a bowl and use a potato masher to mash them until creamy. Leave the puree to cool down. Add the cut ham, chives, egg, salt, pepper, paprika, potato starch and grated mozzarella cheese to the cooled puree. Mix everything thoroughly with a spoon.
Crack the eggs onto a plate and beat them with a fork. Pour panko onto a separate plate. Scoop out the potato-cheese mass with a spoon and shape them into balls. Then, first coat them in the egg wash and then in the panko. Pour a generous amount of oil into a thick-bottomed frying pan, heat it up and when hot, place the cakes on it. Fry the cakes on a medium heat, medium hob, until golden brown on both sides for about 8-10 minutes. Place the fried cakes on a plate lined with paper towel.
