Hard-boiled egg cakes are a simple and cheap dish to prepare. The basis of these egg cakes are hard-boiled eggs, combined with fresh egg and spices. The egg mixture is used for forming small cakes, which are then rolled in breadcrumbs and fried on butter or oil. Ingredients for egg cakes.

  • 6 hard-boiled eggs
  • 1 large raw egg
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2-3 tablespoons of breadcrumbs
  • oil for frying
  • 1/2 teaspoon of herbs de Provence
  • 1/2 teaspoon of dry parsley

For serving:

  • chili sauce

How to make egg cakes.

Blend the hard-boiled eggs, finely chop them or press them through a food processor. Once done, put it into a bowl and add raw egg, salt, pepper, Italian herbs and parsley. Mix all the ingredients thoroughly, then set them aside for 30 minutes in the refrigerator.

Next, take it out from the refrigerator, divide it into 6 equal parts, and form round-shaped balls from them. Roll each ball in breadcrumbs, then slightly flatten them on your hand. Pour oil into a frying pan, heat it up and when hot, put in the egg cakes. Fry the cakes over a medium heat until golden brown on both sides. Place the fried cakes on a serving plate lined with a paper towel.

These egg cakes can be served with sweet chili sauce, ketchup, mushroom sauce, dill sauce or any salad, like cabbage.

Good to know when making egg cakes.

You can replace the dried parsley with fresh ones.

You can season the egg cakes with any mixture of spices. I went for Italian herbs and parsley, but fresh chives, herbs of Provence, sweet ground paprika, but fresh or dried dill will also work well in these cakes.

After frying the egg cakes, you can also freeze them. Simply place them in a plastic container, seal it tightly and put it in the freezer compartment. I keep the cakes in the freezer for up to two months.

You may replace the oil with butter or clarified butter.
