Pork shoulder in a thick and creamy onion sauce is a perfect meat dish for dinner. I usually serve a pork shoulder prepared in this way with mashed potatoes and cabbage slaw. I start preparing the pork shoulder in sauce by flattening the meat, sprinkling it with spices and flour, and then frying it in oil. Once the meat is fried, I do the same with the onion, i.e. I fry it but in oil and in butter. Next, I combine the fried meat with onion and broth and stew until the meat is soft. You will not find cream in this dish, because I do not add it to the sauce. The sauce is thick and creamy thanks to the flour, which I use to coat the meat, and the onion, which while cooking softens and breaks into smaller pieces. Ingredients for pork shoulder in onion sauce.
- 800 g pork shoulder
- 100 g onion
- 3 tablespoons of flour
- 1 and 1/4 teaspoon of salt
- 1/2 teaspoon of black pepper
- 400 ml vegetable broth
- 2 tablespoons of butter
- 4 tablespoons of oil
- 1 bay leaf
How to make pork shoulder in onion sauce.
Cut the cleaned and dried pork shoulder into slices about 1.5 centimetres thick. Flatten each slice as thinly as possible with a meat mallet, then sprinkle with salt, pepper and flour. Pour some oil into a frying pan, warm it up, and put on the meat coated in flour. Fry the meat over a medium heat, until golden-brown on both sides – about 6-7 minutes. Place the seared meat on a plate.
After removing the meat from the pan, put butter and onion cut into small cubes in the same frying pan and fry over a medium heat for 5-6 minutes. Next, put the seared meat, pour in the vegetable broth and add the bay leaf. Bring it to a boil, then reduce the heat to low and simmer covered until the meat is tender. Stir the meat from time to time.

Good to know when making pork shoulder in onion sauce.
Pork shoulder slices should not be fried at once, but in batches. Each slice should fry freely in the oil.
I stewed the meat covered for 1 hour, on a low heat.
The vegetable broth can be replaced with water. If you are using broth that has not been previously seasoned with salt, you can add a pinch of salt to salt the sauce.
