I served toast with tomatoes and feta for today’s lunch. I still managed to collect a few cocktail tomatoes from my vegetable garden and I suspect that I will end this year’s tomato season with them. I still see a few more tomatoes on the plants, but I’m not sure if they will be good to eat, because the constant rain causes them to be attacked by diseases. The tomatoes I collected this season were used to create several delicious dishes, such as risotto, soup and salad. I also ate my cocktail tomatoes fresh and baked.

The recipe for toasts with tomatoes and feta that I am sharing with you below is one of many recipes for which I used homegrown tomatoes. The basis of these toasts is bread, in this case tomato sourdough bread. After being drizzled with olive oil and toasted in a pan, the bread is covered with ajvar paste, on which baked tomatoes and feta cheese are placed. The whole thing is sprinkled with chopped basil leaves and seasoned with pepper. These crispy toasts can be successfully served not only for lunch. Ingredients for toasts with tomatoes and feta.

  • 200 g cocktail tomatoes
  • a pinch of salt
  • 1 teaspoon of olive oil
  • a small bunch of basil
  • 50 g feta cheese
  • 2 tablespoons of ajvar
  • a pinch of freshly ground black pepper

Additionally:

  • 3 slices of bread
  • 2 tablespoons of olive oil

How to make toasts with tomatoes and feta.

Wash the cocktail tomatoes, pat-dry them and place on a baking tray. After that, drizzle them with olive oil, sprinkle with salt and place in the oven preheated to 190 degrees Celsius for 20 minutes. Remove the baked tomatoes from the oven and let them cool down.

Drizzle the slices of bread with olive oil on both sides and place them in a hot frying pan with a thick bottom. Toast over medium heat until the bread is nicely browned on both sides. Remove the toasts from the pan, then cover each one thoroughly with ajvar paste and arrange the roasted tomatoes and crumbled feta cheese on it. Sprinkle the top with chopped basil and sprinkle with freshly ground pepper.

It is worth choosing good quality bread to prepare these toasts, The bread I used when making these simple toasts was sourdough tomato bread. Any sourdough bread will work well in this recipe.
