Potato wedges make a great dish perfect when served by itself or as side dish. To prepare potato wedges, you need good quality baking potatoes, spices and grease. Garlic and fresh herbs are perfect when it comes to adding seasoning to potatoes. The following recipe for potato wedges uses quite a bit of fresh rosemary. Rosemary combines perfectly with the simple taste of potatoes. If you like slightly spicy dishes, you can also add a little chili pepper when flavouring your potato wedges.

Baked potato wedges will taste perfect when served with yoghurt sauce, mayonnaise or ketchup. They are also a delicious addition to be served with meat dishes.

Ingredients for potato wedges.

  • 5 big potatoes
  • 4-5 cloves of garlic
  • 1/4 teaspoon of powdered caraway
  • 2 tablespoons of chopped rosemary
  • 1 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 4 tablespoons of olive oil
  • 1 tablespoon of soft butter

How to make potato wedges.

Wash the potatoes very well, cut them into large wedges and put them in the pot. Pour in some water, bring it to boil and cook for 8 minutes. Pour the pre-cooked potatoes into a colander.

Remove the twigs from the fresh rosemary, chop the leaves and put them in a bowl. Add the olive oil, salt, softened butter, ground caraway, mashed garlic and freshly ground black pepper. Stir, then add the pre-cooked potatoes and rub them thoroughly with spices. Place the potato wedges in a baking tin, which then should be put in an oven preheated to 200 degrees Celsius for 20-25 minutes. During baking, stir the roasting potatoes from time to time.

Good to know when making potato wedges.

If you don’t have any fresh rosemary, you can use dry ones. Do not add two tablespoons of it though, rather just about one. Dry rosemary has a more intense flavour hence too much of it is not recommended.

Type B potatoes will be the best for baking. You can choose the Yukon Golds or Maris Piper variety and many others.

Since the potatoes should be boiled in their skin, it is very important to scrub them well before they are boiled. A kitchen sponge is best for this. It is important to use a clean sponge.
