New potatoes casserole
New potatoes are something I am always eagerly waiting for. Once they arrive, I use them for anything possible.

For me, new potatoes reign supreme when they are prepared in the simplest possible way, i.e. boiled in water. Of course, I serve them with melted butter and dill. In this version, they are an addition to meats. Sometimes, I also serve them with cottage cheese mixed with sour cream and green onion.
Another way I use the new potatoes quite frequently is casserole. Casseroles can be meaty or meat free, depending on what you fancy or what you have in the fridge.
Recently, I prepared a casserole with bacon and tofu cheese. Let me tell you, that tofu cheese perfectly matched the taste of potatoes and the crispy bacon.

Ingredients for new potatoes casserole.
- 800 g new potatoes
- 2.5 teaspoon of salt
- 360 g tofu cheese
- 250 g natural yoghurt
- 200 g chopped raw bacon
- a pinch of black pepper
- a bunch of fresh dill
- a pinch of lemon zest
- 3 cloves of garlic
- 2 tablespoons of butter
How to make new potatoes casserole.
Wash the potatoes, put them in a pot, add 1 teaspoon of salt and water. Cook for 20 minutes from the moment the potatoes start boiling. Drain the water from the pre-cooked potatoes and let them cool down slightly, then cut them into large slices.
Put the diced bacon on a frying pan. Fry over a medium heat until the bacon is browned and crispy. At the end of frying, add the mashed garlic.
Grate the tofu cheese on a large mesh grater, then put it in a bowl. Add finally chopped dill, lukewarm potato slices, fried and cooled down bacon, 1.5 teaspoons of salt, a pinch of pepper, yogurt, grated lemon zest and melted butter. Mix all the ingredients. Put all of it in a casserole dish, then place it in an oven preheated to 180 degrees Celsius for an hour.
Serve the casserole with sour cream.
Good to know when making new potatoes casserole.

I did not remove the skin from the potatoes. They tasted much better when cooked with it.
Do not fry the garlic on a high heat for too long, otherwise it may burn and become bitter.
