Meatballs in tomato sauce

Meatballs are a dish that can be served not only for dinner. Served in a roll with a bit of cheese, red onion and olives, they are a great snack that can also be a great choice for lunch. Most often, however, meatballs land on a plate accompanied with noodles and a little tomato sauce.

Minced meat meatballs

Ingredients for meatballs in tomato sauce.

  • 500 g minced meat (I used turkey)
  • 1 Kaiser roll
  • 1 egg
  • 1 and 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of chopped spring onion
  • 1 tablespoon of potato starch
  • 8 tablespoons of polenta

Tomato sauce:

  • 2 cans of tomatoes (800 g all together)
  • 4 big garlic cloves
  • 1,5 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of herbs the Provence
  • 1 tablespoon of olive oil
  • a pinch of brown sugar
  • 1 teaspoon of dried harissa


  • water for cooking
  • 1 teaspoon of salt
  • Parmezan cheese for serving

How to make meatballs.

Soak the Kaiser roll in water. Once soft, squeeze out the water and put the roll into a bowl. Add the minced meat, egg, salt, pepper, sliced spring onion, potato flour and polenta to it. Mix it well and set it aside for 30 minutes. After 30 minutes, form the meat mixture into small balls, about 4-5 centimetres in diameter.

Put a pot of water and salt on a heat and bring it to boil. Insert the formed meatballs on the boiling water. Bring it all to boil – the meatballs should float on the surface of the water. When this happens, reduce the heat to low and boil for 5 more minutes. Remove the meatballs from the water and add them in the tomato sauce.

Tomato sauce: put olive oil and minced garlic in a large frying pan. Fry for a few seconds. Then add diced canned tomatoes, pepper, salt, Provencal herbs, a pinch of brown sugar and Harissa. Simmer for 20 minutes. Put the meatballs in the sauce. Keep everything on the fire for 5 minutes.

Serve the meatballs with the pasta, sprinkled with Parmesan cheese.

Good to know when making meatballs in tomato sauce.

I used shop-bought chopped canned tomatoes.

I haven’t blended the tomato sauce. You can do this if you want the sauce to have a uniform, liquid consistency.

Personally, most of the time I use chicken or beef for making meatballs. If I used any pork, I would still add some beef to it.
