Chicken in cream sauce with spinach and sun-dried tomatoes is a quick dinner dish that can be prepared in a simple way. To prepare chicken in cream sauce, you need poultry meat, sun-dried tomatoes, fresh spinach leaves, garlic and cream. Plus, of course, a pinch of salt and pepper to taste. The meat I usually select when making this dish is chicken fillets, although legs will be equally tasty. First, I fry the meat in a little olive oil, then add the garlic, tomatoes and spinach. Near the very end of cooking, I pour the cream mixed with water and potato flour – the addition of potato flour makes the sauce thicker. I cook the whole thing for a while, and then serve it immediately after cooking.
I serve the finished dish with boiled rice, but it can also be served with potatoes, pasta or groats. If we decide to add rice or potatoes, an additional salad with fresh vegetables will be a good complement to the whole thing. You can bet on tomato salsa or salad based on green lettuce. - 50 g sun-dried tomatoes
- 200 ml boiling water
- 400 g chicken breast fillets
- 125 g fresh spinach leaves
- 200 ml cream (30%)
- 1/2 teaspoon of salt (flat)
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons of olive oil
- 2 big cloves of garlic
- 1 teaspoon of potato starch
How to make chicken in cream sauce with spinach and sun-dried tomatoes.
Put the sun-dried tomatoes in a bowl, pour boiling water over them and set them aside for 20 minutes. Next, remove them from the water and cut them into thin strips.
Wash the chicken fillets, pat them dry and cut them into medium-sized cubes. Put the chopped meat in a pan, add olive oil and fry over a medium heat for 5 minutes. After that time, add the mashed garlic and continue frying for a few seconds. Next, add the tomatoes cut into strips and fry for 3-4 minutes, then add the spinach leaves and continue frying, this time for 2-3 minutes. Mix the water (in which the tomatoes were soaked), potato flour and cream in a bowl. Pour the liquid from the bowl onto the ingredients frying in the pan, add salt and pepper. Bring everything to a boil and simmer together over a low heat for about 3 minutes.

If the spinach leaves are very large, cut them into smaller strips. Add small and medium spinach leaves whole. The spinach should be washed and dried before adding it to the dish.
When making this dish, I go for sun-dried tomatoes that are not marinated in any olive brine. These types of tomatoes are hard, so first I pour some water over them, soak them in it for a while, and only after a few minutes I cut them and add them to the dish.
