Lamb’s lettuce salad

Lamb’s lettuce is a salad I try eating as often as possible. Of course, I like it best when combined with other vegetables but I also like to serve it on toasts and as an addition to soups.
The recipe that I am sharing with you today is an easy recipe for lamb’s lettuce salad. Of course, lamb’s lettuce salad by itself could be boring, so I added tomatoes, olives and basil to it.
I used tiger tomatoes in this salad, which, I must tell you, do not appear in my kitchen too often. Reason? I am not always able to get them in the store. It’s a pity, because they are really yummy, they taste a bit different from, for example, raspberry tomatoes, which are my favourites, by the way.

Ingredients for lamb’s lettuce and mozzarella salad.
- 4 big tomatoes
- 25 black olives
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- a pinch of salt
- a pinch of black pepper
- 80 g lamb’s lettuce
- 150 g mozzarella cheese
- 15 basil leaves
How to make lamb’s lettuce and mozzarella salad.
Cut the tomatoes into small pieces. Divide the mozzarella into chunks. Cut the basil into strips.
Put the lamb’s lettuce, sliced tomatoes, pieces of mozzarella and olives into a large bowl.
Combine the chopped basil, a pinch of salt, a pinch of pepper, olive oil and lemon juice in a small bowl. Pour the sauce from the small bowl over the vegetables in the large bowl. Gently shuffle with your fingers. Serve the salad with bread or as an addition to meat dishes.

Good to know when making lamb’s lettuce and mozzarella salad.
You can replace lamb’s lettuce with any salad of your choice. Both iceberg lettuce and arugula or a mix of lettuces will work well in this salad.
