Minced meat is suitable not only for meatballs or schnitzels but also for meatloaf.
Baked minced meat with the addition of boiled eggs. This is my proposition for a dinner dish using minced meat.
I was tempted by turkey meat because it is more delicate in taste than beef and is also not as greasy as pork.
I served my meatloaf with home-made tomato sauce. The sauce was slightly spicy thanks to the dried Italian herbs I added to it.
Ingredients for meatloaf.
- 500 g minced turkey meat
- 350 g celeriac
- 4 eggs cooked until semi-soft
- 3 eggs (raw)
- 200 g of rolls
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 teaspoon of dried wild garlic
- 1 tablespoon of breadcrumbs plus 1 tablespoon of margarine to grease the tin
- 1 small onion
- 1 tablespoon of oil
- 1/2 teaspoon of salt
- a can of tomatoes (400 g)
- 1/2 teaspoon of Herb the Provence
Additionally: loaf baking tin and cling film.
How to make meatloaf.
Soak the rolls in water. Once they soften, squeeze out the water and blend them into a creamy mixture.
Parboil four eggs, which should take around five minutes.
Put the minced meat in a bowl. Add the grated celeriac, roll mash, raw eggs, salt, pepper and dried wild garlic. Mix them well together.
Place a sheet of cling film on the counter. Put the minced meat on it in a way that the width of the meat should match the length of the baking tray. Flatten the meat with your hand to a thickness of 1 cm. Place the boiled eggs on the minced meat, side by side, along the width of the meat. It’s best to place them on the side, from which you will start rolling. Once the eggs are in place, start rolling with a bit of help of the cling film. Press the meat firmly so there is as little air as possible left in the meatloaf.
Put the meatloaf in a baking mold previously greased with margarine and sprinkled with breadcrumbs.
Put the loaf in the oven preheated to 180 degrees Celsius for one and a half hours. After an hour, remove the loaf from the oven, remove it very carefully from the baking tin and place it on a baking tray upside down. Continue baking for another half hour.
Serve it warm with tomato sauce and if you like, potatoes, rice or bread.
Tomato sauce: start with cutting the onion into small cubes. Put them in a pot and add olive oil. Simmer for two minutes. Then, add salt, canned tomatoes and Italian herbs. Cook on a low heat for ten minutes. Once ready, blend it.
Good to know when making meat meatloaf.
The tomato sauce can be replaced with horseradish sauce. It goes very well with turkey meat.
