Tomato soup is probably one of the most popular soups.

I do it myself quite often.

Tomato soup can be prepared in many ways. If you want a simple cream soup just with tomatoes and nothing else, cooking this kind of soup takes only a few minutes. To improve the taste of such a simple soup, you can add basil, oregano, thyme, garlic or olive oil.

If you want to make this ordinary soup a little more diverse  serve it with pasta, rice, croutons. Personally, I usually add some double cream as well.

Ingredients for tomato soup. 

  • 1 kg of tomatoes
  • 2 garlic cloves
  • 300 ml of vegetable stock
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1 spoon of olive oil
  • 4 spoons of grated mozzarella
  • 2 spoons of pesto

How to prepare tomato and mozzarella soup.

Put crushed garlic, chopped tomatoes and olive oil to a pot. Fry over low heat for 5 minutes. Then add the vegetable stock, salt and pepper. Bring to boil, then continue cooking for another 20 minutes. At the end blend it. Serve some pesto and grated mozzarella with it.

Good to know when making tomato soup. 

Peel the tomatoes before adding them to the soup. The easiest way to remove the skin is to put them into boiling water for about 15 seconds.
