Pumpkin pudding with tapioca
Vegan pumpkin pudding with tapioca is a perfect recipe for a dessert or snack for people who have excluded dairy, meat and lactose from their diet. Preparing this pudding is very simple and although you need to cook it for about 30 minutes, you don’t have to work too hard with it, assuming, of course, that you already have pumpkin puree at hand. If you don’t have ready-made puree, the time it will take to make this dessert may be significantly longer. I always have plenty of ready-to-use puree in my freezer and I suggest making larger quantities and freezing them.
I make pumpkin pudding with tapioca using plant milk. In this particular recipe, I used rice milk, but I also often use coconut, almond and oat milk to prepare it. I season the pudding to taste with a mixture of spices found in gingerbread. If you don’t have gingerbread spice at home, you can add cinnamon, a bit of nutmeg and ground cloves. Ingredients for pumpkin pudding with tapioca.
- 100 g tapioca pearls
- 250 g pumpkin puree
- 1 l rice milk
- 1 teaspoon of ginger spice mix
- 2 tablespoons of light brown sugar
- 1/2 teaspoon of vanilla extract
To serve (optional):
- 1-2 tablespoons of shredded coconut

How to make pumpkin pudding with tapioca.
Pour milk into a pot, add pumpkin puree, gingerbread spice, brown sugar and vanilla extract to it. Bring it to a boil, add the tapioca, bring it to a boil again, reduce the heat to low and cook it for about 30 minutes or until the tapioca is soft. The boiling pudding should be stirred from time to time. Transfer the cooked pumpkin pudding to serving cups or glasses. Serve it warm or cold, sprinkled with shredded coconut.

Good to know when making pumpkin pudding with tapioca.
The vanilla extract can be replaced with vanilla sugar. If you do that, you should reduce the amount of brown sugar accordingly.
The pudding can be prepared with any type of milk, such as plant milk or cow’s milk.

Tapioca is a starch obtained from the cassava root. It can be purchased in the form of flour, flakes or pearls. You use tapioca pearls/granules/balls in this dish.
