Potato fritters with cottage cheese
Simple to make potato fritters, which taste best made of new potatoes and served with cottage cheese.
It was my grandmother who made the best potato fritters. As with everything, potatoes in that time tasted better than those from now, also, home-made cottage cheese is irreplaceable.
Today I would like to share with you a recipe for the potato fritters I make at home.
Personally I like it the most when the cakes are well seasoned and crispy. This effect can be achieved by adding onion to the potato mixture. I use oil for frying and not lard to avoid the potato fritters being soaked in grease.

Ingredients for potato fritters.
- 500 g potatoes
- 1 medium size white onion
- 1/2 teaspoon of salt
- 1/3 teaspoon of pepper
- 1 egg
- 1 tablespoon of starch
- oil for frying
Cottage cheese:
- 250 g of cottage cheese
- 150 g of sour cream
- 1/3 teaspoon of salt
- a bunch of chives
How to prepare potato fritters with cheese.
Peel the potatoes and grate them on the small or medium grating slot. Add finely ground onion, egg, potato flour, salt and pepper. Mix thoroughly. Heat up oil in a pan. Put the potato mixture on the hot oil and fry on medium heat until golden brown.
Crush the cottage cheese crumbs with a fork, add cream, salt and finely chopped chives. Mix thoroughly.
Serve the cakes while still warm with the cottage cheese.

Good to know when making potato fritters.
Potato cakes can be served with cottage cheese, cream, sugar, goulash, mushroom sauce. There are many options. For those who choose sugar, I would advise not to add neither onion nor pepper.
